Tasting notes: Light lemon yellow colour. Very complex nose off orange, white peach, nectarine and dried herbs with hint of vanilla. Wine is full of flavour with a round middle palate. It has racy lime acidity with elegant finish showing excellent ageing potential.
Food Pairing: Smoked trout and salmon. Guinea fowl. A multitude of creamy dishes and cheeses (Camembert and Brie).
Blend: 92% Sémillon, 8% Sauvignon Blanc Vinification: Grapes were hand selected from an old vineyard with berries that are 33% smaller than usual Semillon berries. 6 hours skin contact before light pressing. Natural settling overnight before juice is inoculated with cultured yeast. Wine was fermented in 300 liter French oak barrels, with further maturation of 10 months before blending and bottling. Only the best barrels were selected for this very rare wine.
