Although the single malt produced at Caol Ila is most commonly matured in bourbon casks or hogsheads, the rare sherry cask bottlings to be released have always caused a huge stir, like the outstanding Caol Ila 2012 Plume featured in the 2021 creation catalogue. With breathtaking precision and eloquence, this versionβs palette of flavours and aromas begins by revealing the intense beauty of its oxidative character, before welcoming peat on stage. When it comes to flavours, the latter plays the leading role, over time developing particularly pronounced medicinal, meaty, empyreumatic and rooty dimensions.
